    There is something magical about Disneyland Paris, no matter how old you are. From the moment you walk through the gates and catch sight of Sleeping Beauty Castle, it feels as though you’ve stepped into another world.

    During my recent trip to Paris, I spent a day exploring the park, enjoying the attractions, and soaking up the atmosphere. While Disneyland is often thought of as a destination for children, I found it just as enjoyable as an adult, especially with the beautiful scenery, themed lands, and countless details that make the park so special.

    One of my favourite moments was simply wandering through Main Street, U.S.A., taking in the charming architecture and watching visitors excitedly begin their day. The castle at the end of the street is every bit as impressive as you would imagine and makes a perfect photo spot.

    Throughout the day, I explored different areas of the park, from Adventureland and Frontierland to Fantasyland and Discoveryland. Each section has its own unique character and atmosphere, making it easy to spend hours discovering hidden corners and enjoying the rides.

    Of course, no trip to Disneyland would be complete without trying some of the treats available throughout the park. From pastries and snacks to themed desserts, there was something tempting around every corner. As someone who loves baking and pâtisserie, I couldn’t help but admire the creativity behind many of the sweet offerings.

    As evening approached, the atmosphere became even more magical. The castle illuminated against the night sky created a beautiful backdrop, and the excitement of the evening entertainment brought visitors together from all over the world.

    Disneyland Paris is more than just an amusement park. It is a place filled with imagination, nostalgia, and moments of joy. Whether you are visiting for the first time or returning after many years, there is always something new to discover.

    For me, it was a wonderful day of adventure, inspiration, and sweet memories in the heart of France.

  • Chocolate-Coated Madeleines

    Chocolate-Coated Madeleines

    Madeleines are one of the simplest and most elegant French pastries. While they are delicious on their own, a thin coating of chocolate adds a beautiful contrast to their delicate buttery flavour.

    These chocolate-dipped madeleines combine a light lemon-scented sponge with smooth dark chocolate, making them perfect for afternoon tea, gifting, or simply enjoying with a cup of coffee.

    Ingredients

    For the madeleines

    • 2 large eggs
    • 100g caster sugar
    • 1 tbsp honey
    • Zest of 1 lemon
    • 100g plain flour
    • 4g baking powder
    • 100g unsalted butter, melted and cooled

    For the chocolate coating

    • 150g dark chocolate (60–70% cocoa)
    • Optional: chopped pistachios, freeze-dried raspberries, or toasted almonds

    Instructions

    1. Prepare the batter

    Whisk together the eggs, sugar, honey, and lemon zest until smooth.

    Sift in the flour and baking powder, then gently fold to combine.

    Add the melted butter and mix until smooth.

    Cover and refrigerate for at least 2 hours or overnight.

    2. Bake the madeleines

    Preheat the oven to 190°C (170°C fan).

    Lightly butter a madeleine mould and fill each cavity about three-quarters full.

    Bake for 9–11 minutes until lightly golden.

    Allow to cool completely.

    3. Prepare the chocolate coating

    Melt the dark chocolate over a bain-marie or in short intervals in the microwave.

    If desired, spoon a small amount of melted chocolate into each madeleine mould cavity.

    4. Coat the madeleines

    Place the cooled madeleines back into the mould on top of the chocolate.

    Gently press so the chocolate forms an even layer on the shell side.

    Sprinkle with pistachios, almonds, or freeze-dried raspberries if using.

    Refrigerate for 15–20 minutes until the chocolate is set.

    5. Serve

    Carefully remove the madeleines from the mould and enjoy.

    Notes

    • Dark chocolate provides the best balance to the buttery sponge.
    • White or milk chocolate can also be used.
    • Store in an airtight container for up to three days.

    Classic French Brioche

    Rich, buttery, and beautifully soft, brioche is one of the most beloved breads in French baking. With its tender crumb and delicate sweetness, it sits somewhere between bread and pastry, making it perfect for breakfast, afternoon tea, or simply enjoyed on its own.

    Although brioche requires a little patience, the result is well worth the effort. The dough develops its characteristic texture through slow mixing and the gradual addition of butter, creating a loaf that is light, airy, and wonderfully rich.

    Ingredients

    For the dough

    • 500g strong bread flour
    • 10g fine sea salt
    • 50g caster sugar
    • 10g instant yeast
    • 5 large eggs, room temperature
    • 250g unsalted butter, softened and cut into cubes

    For the egg wash

    • 1 egg
    • 1 tbsp milk

    Instructions

    1. Prepare the dough

    In the bowl of a stand mixer fitted with a dough hook, combine the flour, salt, sugar, and yeast. Add the eggs and mix on low speed until a rough dough forms.

    Continue kneading for 8–10 minutes until the dough becomes smooth and elastic.

    2. Add the butter

    Gradually add the softened butter, a few cubes at a time, allowing each addition to be incorporated before adding more.

    Continue mixing for 10–15 minutes until the dough is smooth, glossy, and pulls away from the sides of the bowl.

    3. First fermentation

    Transfer the dough to a lightly greased bowl, cover, and leave at room temperature for 1–2 hours until slightly risen.

    4. Chill overnight

    Gently deflate the dough, cover, and refrigerate overnight. Chilling makes the dough easier to handle and improves flavour.

    5. Shape the brioche

    The following day, remove the dough from the refrigerator.

    Shape into a loaf or divide into small portions for individual brioche buns. Place into a buttered loaf tin or brioche mould.

    6. Final proof

    Cover loosely and leave to rise until doubled in size, about 2–3 hours depending on room temperature.

    7. Bake

    Preheat the oven to 180°C (160°C fan).

    Mix the egg and milk together and gently brush over the surface of the dough.

    Bake for:

    • Loaf brioche: 30–35 minutes
    • Individual brioche buns: 15–18 minutes

    The brioche should be deeply golden and sound hollow when tapped.

    8. Cool

    Allow to cool before slicing.

    Notes

    • Use room-temperature eggs and soft butter for the best dough development.
    • The dough may seem very sticky at first; avoid adding extra flour.
    • Overnight chilling greatly improves both flavour and texture.
    • Brioche freezes well and can be refreshed in a warm oven before serving.

    This vanilla and chocolate marble pound cake combines a rich buttery crumb with the comforting flavours of vanilla and cocoa. It is perfect for an afternoon coffee, a weekend bake, or simply when you want something classic and unfussy.

    Ingredients

    For the cake

    • 200g unsalted butter, softened
    • 200g caster sugar
    • 4 large eggs, room temperature
    • 200g plain flour
    • 1 tsp baking powder
    • 1 tsp vanilla extract
    • 20g cocoa powder
    • 2 tbsp milk

    Instructions

    1. Preheat the oven to 170°C (fan 150°C). Grease and line a 2lb loaf tin.
    2. Beat the butter and sugar until light and fluffy.
    3. Add the eggs one at a time, mixing well after each addition.
    4. Stir in the vanilla extract.
    5. Sift together the flour and baking powder, then gently fold into the mixture.
    6. Divide the batter equally between two bowls.
    7. Leave one bowl as the vanilla batter.
    8. In the second bowl, mix the cocoa powder and milk until smooth, then fold into the batter.
    9. Alternate spoonfuls of vanilla and chocolate batter into the loaf tin.
    10. Use a skewer or knife to gently swirl the mixtures together to create a marble effect.
    11. Bake for 50–60 minutes, or until a skewer inserted into the centre comes out clean.
    12. Allow the cake to cool in the tin for 10 minutes before transferring to a wire rack.

    Since moving to the UK, scones have become one of those bakes I return to again and again. Whether enjoyed as part of an afternoon tea or simply with a cup of coffee, they are a lovely reminder that good baking doesn’t need to be complicated.

    This recipe creates classic British-style scones with a soft interior and a lightly golden top.

    Ingredients

    • 250g self-raising flour
    • 50g cold unsalted butter, cubed
    • 25g caster sugar
    • A pinch of salt
    • 150ml whole milk
    • 1 egg, beaten (for glazing)

    Instructions

    1. Preheat the oven to 200°C (180°C fan).
    2. In a large bowl, rub the cold butter into the flour until the mixture resembles fine breadcrumbs.
    3. Add the sugar and salt, then mix well.
